Nose:

2026–2045

One of Silver Oak's advantages is that the winery does much of the waiting for you. Because the wine receives extended barrel and bottle maturation before release, the 2021 is already approachable today.

For drinking now, I would give it approximately 45–60 minutes of air and serve around 17–18°C.

Over the next decade, expect the youthful blackberry and cherry fruit to evolve toward more complex notes of cassis, tobacco, cedar, leather, dried herbs and savory spice.

Well-stored bottles should comfortably develop into the 2040s.

Food Pairing

The richness and polished tannins of Silver Oak make it a natural partner for beef and other roasted or grilled meats.

My first choice would be a grilled ribeye steak, where the richness of the beef complements the Cabernet's dark fruit while the wine's tannins and acidity refresh the palate.
