Nose:
Extraordinarily expressive and deeply complex, opening with layers of black cherry, sour cherry, wild strawberry, dried rose petals, tobacco leaf, leather, balsamic herbs, forest floor, cedar, truffle, and exotic spice. Signature aromas of Mediterranean herbs, orange peel, incense, and earthy minerality emerge beautifully with aeration, revealing the unmistakable depth of great mature Brunello.
Palate:
Luxuriously textured and impeccably balanced, revealing flavours of ripe cherry, blood orange, wild berries, tobacco, licorice, spice, black tea, earthy minerality, and balsamic notes. Rich and concentrated, yet remarkably lifted and energetic, the palate combines the warmth and generosity of the vintage with extraordinary freshness and precision. Powerful without heaviness, layered and endlessly nuanced.
Structure:
Medium to full-bodied with silky yet persistent tannins, vibrant acidity, and exceptional harmony. Salvioni La Cerbaiona is widely regarded as one of the cult producers of Brunello di Montalcino, crafting extremely limited-production wines from low-yielding vineyards with an obsessive focus on quality. The 2007 vintage delivered wines of richness and approachability, but at Salvioni the wine retains remarkable structure and sophistication. Frequently described as sensual, profound, and Burgundian in finesse despite its power.
Finish:
Exceptionally long, savoury, and beautifully persistent, lingering with dried cherry, tobacco, truffle, spice, orange peel, balsamic herbs, and mineral freshness. Seamless, elegant, and deeply captivating.
Salvioni “La Cerbaiona” Brunello di Montalcino 2007 is considered one of the benchmark wines of modern Brunello and a cult favourite among collectors of fine Italian wine. Produced in tiny quantities by the late Giulio Salvioni, La Cerbaiona achieved legendary status for crafting Brunello of extraordinary intensity, purity, and terroir transparency.
Unlike larger estates, Salvioni maintained a deeply artisanal approach, producing wines that marry power with elegance, concentration with finesse, and richness with extraordinary ageing potential. The estate’s Brunellos consistently rank among Tuscany’s most sought-after wines.
The 2007 vintage in Montalcino produced wines of generosity, ripeness, and charm, making them slightly more approachable than structured vintages such as 2006 or 2010, yet still highly age-worthy. Today, La Cerbaiona 2007 is entering a magnificent drinking window—showing beautiful tertiary complexity while still retaining freshness and years of graceful evolution ahead.
The 2007 Montalcino vintage benefited from warm, favourable growing conditions, producing wines of richness, aromatic generosity, and supple tannin structure. While immediately charming in youth, the finest producers—particularly Salvioni—crafted wines with sufficient freshness and balance for long-term ageing.
