Nose:

Structure:

At this stage, however, provenance and storage are extremely important. A bottle that has remained consistently cool and properly stored should continue developing for many years.

Serve at approximately 10–12°C, rather than excessively cold. A slightly warmer serving temperature allows the mature fruit, brioche, toasted nuts and spice to become much more expressive.

I would also use a white-wine glass rather than a narrow Champagne flute, allowing this mature prestige cuvée sufficient room to open.

Food Pairing

Rare 2002 has enough maturity, concentration and vinous character to accompany an entire meal rather than simply serving as an aperitif.

It is exceptional with caviar, lobster, scallops and turbot, while its mature nutty character makes it equally compelling with poultry, mushrooms and aged cheeses.
