Champonnet occupies a fascinating position in the northern sector of Gevrey-Chambertin, just beyond Ruchottes-Chambertin Grand Cru and near the entrance to the Combe de Lavaux.
The terroir is geologically complex, with numerous faults and changing gradients across the slope.
Domaine du Couvent holds approximately 1.1 hectares across two parcels, making it the largest owner in Champonnet.
The first parcel was planted in 1988, while the second contains older vines planted between approximately 1960 and 1990.
The upper sections contain Prémeaux limestone, while the lower portions become increasingly clay-rich, helping create a wine that combines mineral structure with generosity and supple texture.
The two parcels are vinified separately to preserve their individual characteristics before being assembled.
