PHILIPPE CHÉRON – DOMAINE DU COUVENT GEVREY-CHAMBERTIN “LES SEUVRÉES” 2023

Style Summary

A beautifully expressive single-vineyard Gevrey-Chambertin from old Pinot Noir vines, combining ripe red and dark fruit with spice, mineral freshness and the generous structure characteristic of Gevrey.

Les Seuvrées sits at the southern limit of Gevrey-Chambertin, directly below the Grand Cru vineyards of Mazoyères-Chambertin and Charmes-Chambertin.

The 2023 is particularly appealing, with juicy cherry and raspberry fruit, floral notes, and gentle spice wrapped around a fresh, finely structured palate.

Les Seuvrées

Philippe Chéron acquired this tiny 0.26-hectare parcel in 2012.

Les Seuvrées marks the southern boundary of Gevrey-Chambertin and sits immediately below Mazoyères-Chambertin and Charmes-Chambertin Grand Cru.

The vineyard lies over an outcrop of Comblanchien limestone partially covered by Bresse marl, an unusual geological combination that contributes both generosity and mineral definition.

The vines are impressively mature: approximately one-third were planted in 1954, with the remainder dating from 1960.

Production is tiny, with a maximum of approximately 1,500 bottles.

Winemaking

The domaine's approach emphasizes the purity and natural personality of the vineyard.

A portion of the grapes is retained as whole clusters, bringing aromatic lift, freshness, and subtle spice to the Pinot Noir.

The wine undergoes a long, temperature-controlled fermentation and maceration before maturation in French oak, with only a modest proportion of new barrels.

The intention is to preserve fruit and terroir rather than allowing extraction or oak to dominate.

Tasting Profile

Nose:
Red cherry, raspberry and wild berries with violet, gentle spice and subtle earthy notes.

Palate:
Juicy and expressive, with ripe red fruit at the center. Fresh acidity and fine tannins provide definition, while the marl-rich soils contribute an attractive generosity through the mid-palate.

Structure:
Medium-bodied, supple and beautifully balanced, with sufficient depth to be unmistakably Gevrey while retaining excellent freshness.

Finish:
Long and juicy, with lingering cherry, raspberry, spice and subtle mineral notes.

Summary

Philippe Chéron Gevrey-Chambertin “Les Seuvrées” 2023 offers a compelling combination of old vines, tiny production and an exceptional position immediately below Grand Cru terroir.

The marl contributes generosity and breadth, while the underlying limestone brings freshness and definition.

The result is a particularly expressive village Gevrey-Chambertin with considerably more personality than its classification alone might suggest.

Drinking Window

Drink: 2026–2035
Preferred Window: 2027–2033

The 2023 is already showing attractive fruit and a supple, juicy personality, but another year or two in the bottle should bring greater harmony.

This is not a wine that requires a decade of cellaring before it becomes enjoyable. Its combination of ripe fruit, moderate tannins, and freshness should make it particularly attractive from 2027 onward.

If opening young, allow approximately 30–45 minutes in the glass or open bottle.

With bottle age, expect:

Dried Cherry · Violet · Tea Leaf · Forest Floor · Gentle Spice · Earth

Serving Temperature: 16–17°C

Food Pairing

Recommended Pairings:
Duck Breast · Roast Chicken · Pigeon · Veal · Lamb · Beef · Beef Bourguignon · Venison · Porcini Mushrooms · Morels · Époisses · Comté

The Tasting Room Recommendation

A particularly interesting Gevrey-Chambertin for Burgundy enthusiasts.

The combination of vines planted in 1954 and 1960, a tiny 0.26-hectare parcel, and a position immediately below Charmes-Chambertin and Mazoyères-Chambertin Grand Cru gives Les Seuvrées a pedigree well beyond that of a typical village wine.

Pair with duck breast, roast lamb, beef bourguignon, or veal with morels.

Serve at approximately 16°C in a generous Burgundy glass.
