The name “Les Huit Climats” reflects the unusual composition of this wine: Pinot Noir drawn from a mosaic of individual vineyard parcels throughout Chambolle-Musigny.
Among the most important are Condemennes and Clos de l’Orme, situated in the heart of the village's mid-slope vineyards on highly draining limestone scree.
Around two-thirds of the vines used for this cuvée are more than 60 years old.
Combining several different terroirs gives the wine a broad expression of Chambolle-Musigny rather than the personality of a single vineyard.
The grapes are harvested by hand and carefully sorted before vinification.
A long cool pre-fermentation period of approximately 10 days at 10°C precedes spontaneous fermentation with indigenous yeasts.
Fermentation and maceration continue for approximately 20–23 days, with pigeage gradually reduced as fermentation progresses.
The wine is then matured on its fine lees in French oak barrels for approximately 10–14 months before bottling.
