Hand-picked at peak ripeness, the grapes are carefully destemmed, crushed, and transformed into wine through gentle maceration, extracting vibrant color, structured tannins, and layered aromas. Fermentation takes place in traditional vats (lagares) at a controlled temperature of 28–30°C, with constant churning to enrich depth and complexity.
Once the desired sweetness (baumé) is reached, grape brandy is added to create the final fortified wine. This high-quality Port is crafted by blending wines from different harvests, achieving the balance and sensory richness that define aged Tawny Ports. Each component wine has matured in oak casks for varying lengths of time, with the average age of the blend reflected on the label.
The result is a harmonious wine that beautifully expresses the unique character imparted by years of slow ageing in wood. Truly, time well spent in barrel.
