DOMAINE GEORGES JOILLOT BOURGOGNE CÔTE D’OR CHARDONNAY 2023

Style Summary

A beautifully balanced Côte d’Or Chardonnay from the village of Pommard, combining ripe orchard and stone fruit with subtle oak, mineral freshness and a gently saline finish.

The 2023 Bourgogne Côte d’Or Chardonnay shows nectarine, pear and citrus alongside hazelnut, subtle toast and a distinctive flinty note.

Twelve months in oak gives the wine considerably more texture and complexity than you might expect from a regional Bourgogne Blanc, while fresh acidity and limestone-derived minerality keep the palate precise.

An excellent introduction to white Burgundy from the Côte de Beaune.

The Vineyard

Domaine Georges Joillot's Bourgogne Côte d’Or Chardonnay comes from a small 0.54-hectare holding situated entirely within the commune of Pommard.

Although Pommard is overwhelmingly associated with Pinot Noir, Chardonnay planted within the broader Bourgogne Côte d’Or appellation can produce particularly interesting white wines.

The domaine's vines are approximately 15 years old and occupy a south-facing site on white limestone soils.

The southern exposure encourages Chardonnay to achieve good maturity, while the limestone provides the freshness and mineral definition necessary to balance the fruit.

Vinification & Ageing

The grapes are harvested entirely by hand, with green harvesting and additional sorting as needed.

The Chardonnay is pressed as whole bunches before fermentation.

The wine then matures for approximately 12 months in French oak barrels, with around 25% new oak.

This is a meaningful level of barrel aging for a Bourgogne Côte d’Or.

Rather than producing a light, fruit-driven regional Chardonnay, Domaine Georges Joillot gives the wine enough élevage to develop texture, subtle toast, and nutty complexity.

The limestone terroir and fresh acidity provide the necessary counterbalance.

Tasting Profile

Nose:
Nectarine and ripe pear lead initially, followed by lemon, citrus peel and subtle white flowers. With air, notes of hazelnut, almond, flint and restrained toast emerge.

Palate:
Rounded and charming, with ripe stone fruit and orchard fruit through the mid-palate. Fine acidity provides freshness and definition, while oak aging contributes texture without overwhelming the Chardonnay.

Structure:
Medium-bodied, combining generous fruit with fresh acidity and a subtle mineral backbone. The 25% new oak contributes breadth and gentle nuttiness.

Finish:
Clean and persistent, with nectarine, citrus, subtle hazelnut, flint, and an attractive saline note.

Summary

Domaine Georges Joillot Bourgogne Côte d’Or Chardonnay 2023 offers considerably more substance than a simple regional Bourgogne Blanc.

The wine comes from a tiny 0.54-hectare parcel in Pommard, planted on white limestone with a favorable southern exposure.

The fruit is harvested by hand, and whole-cluster pressed before spending 12 months in barrel, including approximately 25% new oak.

That élevage gives the wine breadth and texture.

Nectarine, pear and citrus provide the fruit, while hazelnut, subtle toast and flint add complexity.

Most importantly, fresh acidity and a gently saline finish prevent the wine from becoming heavy.

The result is a rounded yet precise white Burgundy with excellent gastronomic versatility.

Vintage Notes

The 2023 Burgundy vintage produced Chardonnay with attractive ripeness and generally generous fruit.

For this Bourgogne Côte d’Or, the vintage's natural generosity works particularly well with the wine's barrel maturation.

The ripe nectarine and orchard-fruit character has enough concentration to absorb the 25% new oak, while the limestone soils and natural acidity maintain freshness.

The result is a 2023 that should be enjoyable relatively young while still possessing enough structure for several years of bottle development.

Drinking Window

Drink: Now–2031
Preferred Window: 2026–2029

The 2023 is ready to drink now.

At present, expect the wine to emphasize nectarine, pear and citrus, complemented by subtle hazelnut, toast and flinty mineral notes.

Sufficient fruit concentration makes it attractive in youth, while the acidity keeps the oak from dominating.

Another year or two in the bottle should allow the fruit and barrel-derived characteristics to integrate further.

From approximately 2027 onward, expect additional notes of:

Preserved Lemon · Almond · Hazelnut · Brioche · Beeswax · Flint · Saline Mineral

to emerge.

The domaine suggests a general aging potential of approximately 1–6 years, so I would favor drinking this for its fruit, freshness, and developing complexity rather than attempting very long-term cellaring.

Serving Temperature: 10–12°C

I would serve it closer to 11–12°C rather than excessively cold.

Open approximately 20–30 minutes before serving and use a generous white Burgundy glass.

No decanting is necessary.

Food Pairing

The combination of Chardonnay richness, acidity, and subtle oak makes this particularly versatile at the table.

Recommended Pairings:
Oysters · Scallops · Crab · Langoustines · Grilled Prawns · Lobster · Sea Bass · Turbot · Raw Fish · Roast Chicken · Veal · Charcuterie · Mushroom Risotto · Goat Cheese · Gruyère · Brie

The Tasting Room Recommendation

Pair with scallops, crab, grilled prawns, or roast chicken.

The wine has enough texture and subtle oak to work with butter-based preparations, while the saline finish makes it particularly successful with seafood.

For a simple pairing, I would serve it with seared scallops and beurre blanc.

For something richer, roast chicken with mushrooms would let the hazelnut and subtle oak characteristics come through more.

Serve around 11–12°C in a Burgundy glass, and let the wine warm gradually through the meal.

Why This Bourgogne Côte d’Or Stands Out

This is worth positioning slightly above a conventional entry-level Bourgogne Chardonnay.

The combination of:

Pommard Fruit · Tiny 0.54-Hectare Parcel · White Limestone · South-Facing Exposure · Hand Harvesting · Whole-Cluster Pressing · 12 Months in Oak · 25% New Barrels

Gives the wine a level of seriousness not always found at the regional-appellation level.

For guests looking for the character of Côte de Beaune Chardonnay without moving into village-level Meursault, Puligny-Montrachet, or Chassagne-Montrachet pricing, this is a particularly attractive option.
