Dom Pérignon Rosé 2008
A vivid salmon-pink champagne with copper undertones and creamy, persistent mousse. On the nose, it bursts with wild strawberries, raspberries and red cherries, layered with notes of citrus peel, pink grapefruit, violet and iris, joined by graceful hints of toast, smoke and spice. The palate is full-bodied and silky, alive with tension — red fruit and blood orange mingle with minerality, herbs, and a delicate botanical edge. There is impressive structure underlined by vibrant acidity and a long, penetrating finish carrying peony florals, white pepper spice and subtle salinity.
Perfect with rich seafood (e.g. lobster, crab), game birds, duck breast, foie gras, smoked salmon, or even high-quality dark chocolate and berry desserts.
