Dom Pérignon Plénitude 2 (P2) 2003
A rich, medium-golden champagne with fine, persistent bubbles and a lively sheen. On the nose, it opens up with toasted hazelnut and brioche, then layers of dried apricot, ripe apple, and grilled pineapple. There are also hints of vanilla, nougat, honey, and subtle earthy/mineral undertones that recall warm stone and ash.
On the palate it is full and opulent but balanced: ripe fruit richness (apple, baked peach, pineapple) combines with creamy texture, with spiced yellow fruit, mild smoke, and a distinct minerality that carries into a long, vertical finish. A fresh acidity and light saline lift give elegance and tension despite its power.
Perfect with fine seafood (like scallops or oysters), dishes with rich cream sauces, roasted poultry, or even richer aged cheeses. Also shines as a contemplative wine on its own due to its complexity and depth.
