Nose: Powerful and wonderfully distinctive. Fresh sugar cane and honey are joined by ripe tropical fruit, dried banana and citrus peel, developing into medicinal herbs, camphor, pepper and warm spices.
Palate: Intense and concentrated, yet impressively textured. Sweet cane juice and honeyed fruit lead into vanilla, aromatic herbs, pepper and baking spices. The high proof gives tremendous energy while the tropical maturation provides richness and roundness.
Structure: Full-bodied, high-proof, and deeply expressive. There is an intriguing tension between the rustic, vegetal personality of Clairin and the sweeter, more polished influence of barrel maturation.
Finish: Exceptionally long and warming, leaving layers of cane, honey, dried fruit, spice, herbs, and oak.
Vieux Sajous is produced by Michel Sajous at Distillerie Chelo in Saint-Michel-de-l’Attalaye in northern Haiti. Sajous works with the old Cristalline variety of sugar cane, with fermentation occurring naturally through indigenous yeasts. Distillation takes place in a small pot still heated directly using dried sugar-cane bagasse—the fibrous material remaining after pressing.
The 2020 distillate spent five full years aging in Haiti's tropical climate. Sources for this release describe a marriage of 19 former whisky, rum, and bourbon barrels, bottled without chill filtration or added coloring.
This maturation transforms traditional Clairin without disguising its origins. It remains unmistakably Haitian—wild, aromatic and terroir-driven—but gains the richness and complexity associated with seriously aged Caribbean rum.

Five years of tropical maturation is significant for a spirit as naturally expressive as Sajous. Earlier aged Sajous releases have demonstrated just how successfully the distillate handles barrel maturation, and Velier regards Vieux Sajous as one of the most accomplished examples of aged Clairin.
Drink now–2045+
As a high-proof distilled spirit, it does not require bottle aging. Once bottled, its evolution is extremely slow when stored upright, away from heat and direct sunlight.
For drinking now, I would allow it 10–15 minutes in the glass before tasting. At 59.52%, adding a few drops of still water after the first taste can reveal considerably more fruit, herbs and cane character.
Best enjoyed primarily as a contemplative sipping rum, but excellent alongside dark chocolate, caramelized pineapple, roasted banana, coconut desserts, aged Comté, blue cheese or a fine cigar.
For The Tasting Room, I would position this firmly in the collector/connoisseur category rather than simply as another aged rum. Clairin is one of the Caribbean's most fascinating traditional spirits, and this five-year-old Sajous shows what happens when that distinctive Haitian distillate gets serious tropical maturation.
