Predominantly Pinot Noir (with Chardonnay)
Rosé achieved by adding a small proportion of still red wine from Bollinger’s own Grand Cru Pinot Noir vineyards (Aÿ & Verzenay)
Fermented in old oak barrels, then aged extensively on lees
Tasting Notes
Nose: Wild strawberries, redcurrant, raspberry compote, blood orange, rose petals, subtle spice and toasted brioche
Palate: Structured and vinous, with layers of red berry fruit, citrus zest, chalky minerality, and a gentle smoky note
Finish: Long, precise, and elegant with fine tannic grip and freshness
Vintage Character – 2014
A cooler, classic vintage
Bright acidity, purity of fruit, and excellent balance
Less opulent than warmer years, but very refined and age-worthy

Duck breast, pigeon, or quail
Tuna or salmon (lightly seared or crudo)
Veal, mushroom dishes, or even lamb with restraint
Surprisingly excellent with aged hard cheeses
