Nose:

Palate:
Fresh, lively and beautifully balanced. Juicy strawberry and raspberry flavors are carried by energetic acidity and an elegant stream of fine bubbles, creating a sparkling rosé that feels both refreshing and surprisingly substantial.
Structure:
Light to medium-bodied with crisp acidity and a fine, persistent mousse. A short period of skin contact gives Bollamatta its attractive rosé color and aromatic red-fruit character, while the second fermentation in tank preserves freshness and vibrancy.

Clean, fresh and surprisingly persistent, with lingering wild berries, subtle herbs and a delicate savory note.
Bollamatta is Bibi Graetz's wonderfully unconventional interpretation of sparkling Sangiovese.
The name combines bolla, meaning “bubble,” with matta, meaning “crazy”—a fitting description for a sparkling wine from one of Tuscany's most creative winemakers.
What makes Bollamatta particularly distinctive is the quality of its fruit. The wine is produced from Sangiovese grown in 50–80-year-old vineyards associated with Bibi Graetz's celebrated Testamatta and Colore wines. Grapes removed during vineyard thinning are harvested later than usual, once they have reached the ideal ripeness for sparkling-wine production.
Following gentle pressing, the juice remains briefly in contact with the skins to capture colour and aroma before fermentation in temperature-controlled stainless steel. A second fermentation using the Charmat method creates its delicate bubbles while retaining Sangiovese's vibrant fruit.
The result is quintessential Bibi Graetz: creative, energetic and slightly rebellious, yet underpinned by serious vineyards and thoughtful winemaking.

Bollamatta is designed primarily for youthful enjoyment, when its strawberry fruit, freshness and lively mousse are at their most expressive. Serve well chilled at approximately 6–8°C.
A superb aperitif, but with enough character to accompany an entire meal. Excellent with prosciutto and charcuterie, burrata, smoked salmon, tuna tartare, grilled prawns, sushi, pizza, light pasta dishes and fresh Mediterranean salads.
Its combination of Sangiovese fruit and refreshing bubbles also makes it particularly enjoyable for brunch, grazing boards, and casual celebrations—a sparkling rosé meant to be enjoyed rather than overthought.
