A distinctive aniseed aperitif from Provence, Aqualanca L’Anis d’Anton offers a refined interpretation of southern France’s celebrated anise-drinking tradition.
Fresh, intensely aromatic, and unmistakably Mediterranean, it combines pronounced anise and licorice character with aromatic herbs and botanicals, creating a refreshing aperitif designed to be enjoyed slowly with chilled water.
Producer: Liquoristerie de Provence
Region: Provence, France
Country: France
Style: Aniseed aperitif
Serving: Diluted with chilled water
Nose: Immediately aromatic, dominated by fresh anise with notes of licorice, fennel, and fragrant Mediterranean herbs.
Palate: Smooth and intensely flavored, with sweet anise at the forefront, followed by licorice and herbal, gently spicy nuances. Dilution with water opens the aromatics and gives the drink a softer, fresher character.
Texture: Silky and concentrated when tasted neat, becoming lighter and exceptionally refreshing once diluted.
Finish: Long and aromatic, with persistent anise, licorice, and Provençal herbal notes.
L’Anis d’Anton reflects the long-established tradition of enjoying anise-based aperitifs in Provence.
These drinks are deeply connected to the lifestyle of southern France—long lunches, pétanque, shaded terraces, and an aperitif enjoyed before dinner on a warm Mediterranean evening.
Liquoristerie de Provence specializes in traditional Provençal aperitifs and liqueurs, combining regional drinking traditions with distinctive presentations and recipes.
The classic preparation is approximately:
1 part L’Anis d’Anton
4–5 parts chilled still water
Pour the anise aperitif into the glass first, then slowly add very cold water.
As you add the water, the aromatic oils released from the anise create the characteristic cloudy, opalescent appearance of traditional anise aperitifs.
Add ice afterward, if desired.
Best enjoyed as an aperitif alongside Provençal olives, tapenade, salted almonds, anchovies, charcuterie, grilled vegetables and Mediterranean-style tapas.
Its intense anise character also makes it particularly refreshing before seafood and lighter Mediterranean dishes.
A wonderfully Mediterranean aperitif and an interesting alternative to traditional Pastis.
Aqualanca L’Anis d’Anton is particularly suited to guests who enjoy anise-driven spirits, Pastis and traditional French aperitifs, but are looking to discover something a little less familiar.
For The Tasting Room Wine Bar, I would make the presentation part of the experience: serve a measured pour in a beautiful glass accompanied by a small carafe of ice-cold water and ice on the side, allowing the guest to watch the drink transform as the water is added.
A refreshing and characterful choice for the Cayman climate, bringing a little piece of Provence to the Caribbean.
Best Enjoyed: Apéritif • Chilled Water • Mediterranean Style
