The grapes are sourced from carefully selected parcels, with mature vines planted on the limestone-rich soils characteristic of Chablis. Fermentation and maturation in stainless steel preserve the purity, freshness and mineral expression of the Chardonnay.
Nose:
Refined and expressive, with fresh lemon, citrus peel, green apple and white-fleshed fruit complemented by delicate floral notes and a cool mineral character. Bottle age brings additional nuances of dried citrus, crushed stone and subtle savoury complexity.
Palate:
Pure, focused and beautifully balanced. Citrus and orchard fruits are carried by vibrant acidity and a pronounced mineral core. The 2020 now shows greater breadth and texture while remaining distinctly fresh and precise.
Structure:
Medium-bodied and wonderfully composed, combining the natural richness of Chardonnay with the tension and minerality characteristic of Chablis. Stainless-steel maturation keeps the expression clean and free from overt oak influence.
Finish:
Long, elegant and distinctly saline, with lingering citrus, stone and subtle savoury notes.
The Signature cuvée represents a more selective interpretation of Alain Geoffroy’s classic Chablis.
Rather than relying on oak for richness, the wine derives its complexity from carefully selected vineyard parcels, mature vines and Kimmeridgian limestone soils.
Ageing entirely in stainless steel allows the fruit and terroir to remain at the forefront, producing a wine of clarity, precision and impressive mineral character.
The result is quintessential Chablis: pure Chardonnay, vibrant acidity, elegant fruit and a long saline-mineral finish.
The 2020 vintage brought excellent ripeness and concentration to Chardonnay in Chablis, giving the wine generosity through the mid-palate while retaining the freshness and acidity necessary for balance.
With several years of bottle development, the youthful citrus and white-fruit character is beginning to evolve toward more complex mineral, savoury and lightly developed notes.
The wine is now entering a particularly attractive stage, combining mature complexity with the freshness and precision expected from fine Chablis.
Drink now – 2028
The 2020 is drinking beautifully today and should continue to develop gracefully over the next few years.
For maximum enjoyment, I would favor drinking it between now and 2028, while it retains the ideal balance between mature complexity and Chablis freshness.
Serving Temperature: 10–12°C
Avoid serving excessively cold. Around 11–12°C will allow the wine’s texture, minerality and developing complexity to show more fully.
The combination of minerality, acidity and developing maturity makes this an excellent gastronomic Chablis.

The Tasting Room Recommendation:
Pair with seared scallops, grilled sea bass, or fresh oysters. At this stage of its development, the 2020 also has enough texture and complexity to accompany richer dishes such as lobster or roast chicken.
For a particularly elegant pairing, serve alongside oysters or Osetra caviar—the wine’s saline minerality and refreshing acidity provide a beautiful counterpoint to their richness and natural salinity.
